Carolina’s Chocolate is named after my grandmother, Carolina Macias Garcia. She influenced much of my life and I credit her with my cooking talents and savory palate.
She graces the labels of my chocolate with other family members, who have captured the essence of my recipes. Spicy Sonoran is a classic Mexican recipe of cinnamon and cayenne chili blended in a %64 cocoa. Carolina is on this package because she embodies my sense of Mexico. Jalisco Jalapeno is the creamiest of white chocolate at %31 cocoa butter, cream, cinnamon and jalapeno. My dignified grandfather is on this label because the man loved his green chili. The dark features of my father, Joe Jaimes, were an easy fit with the smoky spice of chipotle and dark richness of the chocolate at %70 cocoa. Salty Senorita is a well-balanced chocolate at %64 cocoa and sea salt. New this fall includes two new flavors, Holy Mole! and Las Abuelas. Try them all!
